While we are not against using tofu and may consider using it in the future, we chose to move forward with using tempeh because of its extra health benefits as a result of the fermentation process.
The tempeh we use is made locally by our partners at Project Umami. We thoroughly vetted this company and even visited their facility in Boulder. Project Umami definitely offers the best tempeh in Colorado, as they use local and organic ingredients and a cutting edge fermentation process that boosts the health benefits and flavor of the tempeh. This new tempeh is definitely higher quality than our old tempeh, and has a stronger flavor. Their tempeh is also soy-free! YAYE is not a soy free company; however, we like to be able to offer soy-free options to customers with soy allergies or sensitivities.
We don't use meat alternatives (aside from things like our "mushroom walnut crumble" that we make in-house) because most meat alternatives use harmful/toxic seed-based oils and other processed ingredients that do not align with our nutritional commitments or pillars of nutrition.
